Abstract:
Batch cookers, as well as methods for cooking using the batch cookers, are provided. A batch cooker comprises a cooking trough configured to hold a volume of heated cooking oil. An oil recirculation system delivers heated cooking oil from an external heat source (e.g., a heat exchanger) to the cooking trough through a series of valves and inlets. After use in cooking, used cooking oil is drained from the cooking trough and filtered (e.g., using a drum filter) before being recirculated into the heat source for reuse in subsequent cooking cycles. One application for the batch cooker of the present disclosure is to cook kettle-style potato chips. Accordingly, the batch cooker is configured to facilitate the multiple cooking temperatures required to produce kettle chips.

Methods and systems are provided for a rotating continuous fryer. In one example, an oil reservoir of the continuous rotating fryer is heated by a heating cartridge, the heating cartridge comprising tubing with a branched, sinuous geometry attached to a base plate. Furthermore, the rotating continuous fryer has an upper portion, adapted to pivot away from a lower portion of the fryer about a hinge positioned at an outlet side of the rotating continuous fryer.

Abstract:
A dual purpose fryer for continuous preparation of fried products is disclosed. The dual purpose fryer may include an elongated cooking trough configured to hold a volume of cooking oil and including a plurality of fluid connected cooking zones. The temperature of the cooking oil within each cooking zone is established by controlling a flow rate of hot cooking oil into the cooking zone through a hot oil fryer inlet and a flow rate of cool cooking oil from the cooking zones through a cool oil fryer outlet. The temperature of the cooking oil within each of the cooking zones collectively establishes a thermal profile across the elongated cooking trough.
